- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onions, bell peppers, and garlic to the skillet. Sauté until softened, about 5 minutes.
- Stir in the rice, beef broth, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally.
- Transfer the mixture to a greased casserole dish. Cover with foil and bake for 25-30 minutes, or until the rice is fully cooked.
- Remove the foil, sprinkle the shredded cheese on top, and bake uncovered for an additional 5-10 minutes, until the cheese is melted and bubbly.
