Ingredients:

For the Patties:

  • 1 cup cooked quinoa (or brown rice)
  • 1 cup grated carrots
  • 1 cup finely chopped zucchini (squeeze out excess moisture with a paper towel)
  • 1/2 cup finely chopped onion
  • 1 clove garlic , minced
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1 large egg (or flax egg for vegan option: 1 tbsp ground flaxseed + 2.5 tbsp water)
  • 1/4 cup grated Parmesan cheese (optional, omit for vegan version)
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for cooking)

For Serving (Optional):

  • Burger buns
  • Lettuce, tomato slices, avocado, or hummus
  • Tahini sauce or yogurt dressing
