In a large mixing bowl, combine the shredded aged cheddar cheese and shredded smoked Gouda cheese.
Add the mayo and cream cheese to the bowl. Mix well until all the ingredients are thoroughly combined. Add the chopped roasted red peppers to the mixture and stir until evenly distributed.
Sprinkle in the onion powder and dry mustard. If desired, add a pinch or two of cayenne pepper for some heat. Mix everything together until well incorporated. (You can also use an electric mixer if you want.)
If you prefer a milder flavor, add the dried parsley and mix it into the dip. This step is optional and can be skipped if desired.
Once the dip is thoroughly mixed, cover the bowl with plastic wrap or transfer it to an airtight container. Refrigerate for at least 1 hour and preferably overnight to allow the flavors to meld together.
