1. Preheat oven to 400°F (200°C). Wash and dry 4 large baking potatoes. Prick them with a fork. Bake for 50-60 minutes until tender.
2. In a skillet, melt 4 tbsp butter. Add thinly sliced onions, garlic, and thyme. Cook until caramelized, about 20-25 minutes. Deglaze pan with wine/sherry. Pour in broth and bring to low boil. Cook until almost all liquid is gone.
3. Cut a slit in each baked potato and scoop out the inside. Spoon French onion mixture into each potato.
4. Top each potato with shredded cheese. Bake until cheese is melted. For more of that browning color, put in broiler for 1 min or so.
