Instructions:
In a bowl, mix the 100 ml of water, 100 g of flour, dry yeast, and sugar to prepare the starter.
Let the starter rest for 30 minutes until it becomes bubbly and active.
Add the remaining flour, water, olive oil, and salt to the starter.
Knead until you get a smooth and elastic dough.
Cover the bowl with a kitchen towel and let it rise for 8 hours or overnight.
After the dough has risen, take small portions and shape into round flat fritters.
Fry the fritters in hot oil until golden brown on both sides.
Drain on paper towels and serve hot.

These are great served plain, with cheese, cold cuts, or even a bit of sugar or honey if you like a sweet twist.
