Instructions:

  2. In a small bowl, whisk together the poppy seeds, lemon juice, honey (or maple syrup), and, if desired, Greek yogurt or mayonnaise.
  3. Drizzle the dressing over the salad ingredients and gently toss to combine.
  4. Serve immediately, or refrigerate for 15–20 minutes to allow the flavors to meld.
