Directions
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Slice the onions into discs and carefully separate them into rings.
In a shallow dish, mix together the almond flour, paprika, garlic powder, cayenne pepper, salt, pepper, and Italian seasoning.
In another dish, whisk the eggs.
Dip each onion ring into the whisked eggs, then coat with the almond flour mixture.
Place the coated onion rings on the prepared baking sheet.
Sprinkle a mix of shredded mozzarella and Parmesan cheese over the onion rings.
Bake in the preheated oven until the cheese is bubbly and golden brown, about 15-20 minutes.
Allow to cool slightly before serving.
Variations & Tips
For a spicier kick, add more cayenne pepper or a dash of hot sauce to the egg mixture. If you’re not a fan of almond flour, you can try using coconut flour, but be aware it may change the texture slightly. For a different flavor profile, swap the Italian seasoning for a mix of cumin and chili powder. You can also experiment with different cheeses, like cheddar or pepper jack, for a unique twist. If you’re prepping ahead, you can bread the onion rings and store them in the fridge for a few hours before baking.
