Drain and season: Using a slotted spoon, remove the calamari from the oil and drain on paper towels to remove excess oil. Season the calamari immediately while still warm so the salt adheres well.
Serving: Serve the fried calamari hot, accompanied by lemon wedges and a sauce of your choice, such as garlic mayonnaise, tartar sauce or hot sauce for extra flavor.
