Instructions:
1. Toast the Bread: Butter the exterior of the sourdough slices with 1 tablespoon of butter (½ tablespoon per slice). Toast the bread, buttered side down, in a skillet over medium heat until golden brown.
2. Cook the Eggs: In a separate large skillet over medium heat, melt the remaining tablespoon of butter. Add the cracked eggs, sprinkle with salt and pepper, and cook for 2 minutes, or until the bottoms are firm. Gently flip the eggs and cook for an additional minute. Place the cheese slice on top of the eggs after flipping to melt.
3. Assemble the Sandwich: Remove the eggs from the skillet and place them on a slice of sourdough. Top with the bacon strips and add the remaining slice of sourdough on top, ensuring the buttered sides are on the exterior. Add any condiments you desire.
Notes:
For added flavor, cook the eggs in rendered bacon fat instead of butter. Olive oil is also a good substitution.
