Instructions:
Heat the oil in a large wok or skillet over medium-high heat.
Add the onion and cook until softened, about 2-3 minutes.
Add the mixed vegetables and cook for another 2-3 minutes.Push the vegetables to the side and add the beaten eggs. Scramble them until just set.
Add the garlic and cook for 30 seconds, or until fragrant.
Add the cooked rice and stir to combine with the vegetables and eggs.
Drizzle in the soy sauce and sesame oil, and season with salt and pepper to taste.
Stir-fry for another 2-3 minutes, or until the rice is heated through.
Serve hot, garnished with green onions or spinach if desired.
