Ingredients
- 1 pound ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 can (15 ounces) ranch-style beans
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 bag (10.25 ounces) Fritos
- 1 1/2 cups shredded cheddar cheese
Instructions
Preparation: Preheat your oven to 350°F (175°C).
Layering the Base: Spread 3/4 of the Fritos in the bottom of a 9×13 inch baking dish.
Cooking the Meat: In a large skillet, brown the ground beef with the chopped onion until the meat is fully cooked and the onion is soft. Drain any excess fat.
Seasoning: Stir in the taco seasoning until well blended with the meat mixture.
Mixing in Vegetables: Add the diced tomatoes, beans, and corn to the skillet. Mix well until everything is combined.
Assembling the Pie: Pour the beef and vegetable mixture over the Fritos in the baking dish, spreading it into an even layer.
Cheese Topping: Sprinkle the shredded cheddar cheese over the top of the beef mixture.
Baking: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Serving: Serve the Frito Pie topped with the remaining Fritos and your favorite taco toppings, such as sour cream, sliced jalapenos, chopped tomatoes, and shredded lettuce.
