- Prepare the Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the Butter:
- Add the cold butter cubes to the dry ingredients. Use your fingers, a pastry blender, or a fork to blend in the butter until it becomes sandy with small pieces of butter visible.
- Add the Wet Ingredients:
- In a small bowl, beat the egg and milk together. Pour this mixture into the bowl with the dry ingredients, then add the vanilla extract. Mix gently with a spatula until the dough begins to form.
- Add the Fruits:
- Add the dried fruit and lemon zest (if using) to the dough. Mix gently. If the dough is too dry, add a little more milk, one tablespoon at a time, until the dough is just moist.
- Shape the Dough:
- Transfer the dough to a lightly floured surface. Flatten the dough into a disk about 1 inch thick. Use a sharp knife or cookie cutter to cut the dough into 6 to 8 wedges or circles, depending on your preference.
- Preheat the Air Fryer:
- Preheat the air fryer to 175°C (350°F) for approximately 3 to 5 minutes.
- Prepare for Cooking:
- Line the air fryer basket with parchment paper or lightly grease it. Place the pieces of dough in the basket, making sure to leave a little space between each scone.
- Bake the Scones:
- Bake at 175°C (350°F) for 10 to 12 minutes, or until the scones are golden brown on top and a toothpick inserted comes out clean.
- Brush with Milk:
- Optional: After baking, brush the tops of the scones with a little milk or melted butter for a glossy finish.
- Let Cool and Serve:
- Allow the scones to cool slightly before serving. Enjoy with heavy cream, jam, or butter, as desired!
