Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
Prepare the Beef Sausage Bites:
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Slice the beef sausage links into bite-sized pieces and add them to the skillet.
Cook for 4–6 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside.
In the same skillet, melt 2 tablespoons butter. Add the minced garlic and red pepper flakes (if using). Cook for 1–2 minutes until fragrant.
Toss the cooked sausage bites in the garlic butter mixture and set aside.
Make the Creamy Parmesan Sauce:
In a separate skillet or saucepan, melt 2 tablespoons butter over medium heat.
Add the minced garlic and sauté for 1–2 minutes until fragrant.
Stir in the heavy cream and bring to a gentle simmer. Let it cook for 3–4 minutes, allowing the sauce to thicken slightly.
Stir in the Parmesan cheese, black pepper, and nutmeg (if using). Mix until smooth and creamy. Taste and adjust seasoning with salt if needed.
Combine Pasta and Sauce:
Add the cooked pasta to the sauce, tossing to coat evenly.
If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
Serve:
Divide the creamy Parmesan pasta into bowls or plates.
Top each serving with the garlic butter beef sausage bites.
Garnish with chopped parsley and extra grated Parmesan cheese.
