Instructions:
Preheat Grill: Set grill to medium-high heat.
Prepare Garlic Butter: Divide the garlic butter in half. Melt one half in the microwave for 20–30 seconds.
Toss Potatoes: In a large bowl, mix potatoes and diced onions. Pour melted garlic butter over the top and stir to combine. Set aside.
Slice the Steak: Cut the steak into 2-inch thick slices. Avoid cutting too small to prevent drying out.
Coat with Butter: Rub the remaining unmelted garlic butter evenly over the steak pieces.
Assemble Foil Packets:
Lay out 4 to 6 pieces of 15-inch (40 cm) aluminum foil.
Divide the steak and potato mixture evenly among the foil pieces, placing them in the center.
Sprinkle with parsley and season with salt and pepper.
Fold the foil: fold sides inward, then fold the bottom up to seal completely and prevent leaking.
Grill Packets:
Place sealed packets on the hot grill.
Cover and cook for 7 minutes.
Flip and cook the other side for another 5 minutes, or until the potatoes are tender.
Add Cheese & Toppings:
Carefully open the foil packets (watch out for steam).
Sprinkle cheddar and mozzarella cheese over the potatoes.
Leave packets open on the grill for about 3 more minutes, until cheese melts.
Top with cooked bacon and green onions.
Serve: Adjust seasoning with additional salt and pepper if needed. Serve hot and enjoy!
