Cook the Gnocchi:

Boil a large pot of salted water and cook the gnocchi according to package instructions. Drain and set aside.
Cook the Chicken:

Heat olive oil in a large skillet over medium heat. Season the diced chicken with salt and pepper, then add to the skillet. Cook for 5-6 minutes, stirring occasionally, until golden brown and fully cooked. Remove the chicken and set aside.
Prepare the Sauce:

In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
Combine and Simmer:

Stir in the heavy cream, chicken broth, and red pepper flakes (if using). Simmer for 3-4 minutes until the sauce slightly thickens.
Add Spinach and Cheese:

Add the fresh spinach to the skillet and cook until wilted. Stir in the Parmesan cheese until melted and combined.
Finish the Dish:

Return the cooked chicken and gnocchi to the skillet. Toss everything together until well coated in the creamy sauce.
Serve hot, garnished with fresh parsley and extra Parmesan if desired.
