Directions:
In a large skillet, heat the olive oil over medium heat. Add the chicken strips seasoned with salt, pepper, and paprika. Cook for 5-7 minutes, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant. Add the broccoli and stir-fry for 3-4 minutes, until tender but still crisp.
Add the chicken broth and fresh spinach. Cook for 2 more minutes, or until the spinach wilts.
Return the chicken to the pan, mix well, and add the lemon juice. Cook for an additional 2-3 minutes to allow the flavors to meld.
