Ingredients (Serves 4)

  • 300 g raw shrimp, peeled and deveined

  • 2 garlic cloves, finely chopped

  • 1 carrot, cut into thin strips

  • 1 red bell pepper, sliced

  • ½ yellow bell pepper, sliced

  • ½ head of broccoli, cut into small florets

  • ½ cup snap peas or snow peas

  • 2 tbsp olive oil (or sesame oil)

  • 2 tbsp soy sauce

  • 1 tbsp honey or brown sugar

  • 1 tsp grated ginger (optional)

  • ¼ cup cashews (optional, for crunch)

  • Salt & pepper, to taste
