Step 3: Bake
Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely before frosting.
Step 4: Prepare the Glow-in-the-Dark Frosting
- In a mixing bowl, beat butter until creamy.
- Gradually add powdered sugar, mixing well.
- Add tonic water and vanilla extract, continuing to mix until smooth. (The quinine in the tonic water is what makes it glow under a blacklight!)
- If desired, mix in neon food coloring to enhance the glowing effect.
Step 5: Decorate
- Pipe the frosting onto the cooled cupcakes using a piping bag.
- Add edible glitter, sprinkles, or other decorations as desired.
- Place the cupcakes under a blacklight and watch them glow!
Tips & Tricks
- Maximize the Glow: Use only tonic water with quinine, as this is what makes the frosting glow under a UV light.
- Flavors & Variations: Want a chocolate version? Swap 1/3 cup of flour for cocoa powder.
- Storage: Keep leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Make It Vegan: Substitute dairy-free butter, plant-based milk, and an egg replacer for a fully vegan option.
