Preheat your oven to 180°C (350°F).
Crumble the goat cheese into a bowl and add the honey, chopped walnuts, and a little pepper. Mix well.
Cut each brick pastry sheet in half to form strips. Brush them with melted butter.
Place a tablespoon of the goat cheese mixture on the edge of a brick pastry strip. Fold it into a triangle to enclose the filling.
Repeat with the other strips and arrange them on a baking sheet.
Bake for 12-15 minutes, until the samosas are golden brown and crispy. Serve warm with a drizzle of honey if desired and fresh herbs for garnish.
