Directions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, melted butter, and vanilla extract. Mix until smooth and well combined.
Transfer the sweet potato mixture into a greased baking dish, spreading it evenly.
Sprinkle the mini marshmallows evenly over the top of the sweet potato mixture.
Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
Allow to cool slightly before serving.
Variations & Tips
