Instructions
1. Prep the Chicken:
Halve the chicken breasts lengthwise to make 4 thin cutlets.
Season both sides with salt, pepper, garlic powder, and smoked paprika.
2. Grill or Sear:
Heat olive oil in a grill pan or skillet over medium-high heat.
Grill the chicken for 4–5 minutes per side, or until fully cooked and nicely charred.
During the last minute of cooking, brush each side with BBQ sauce and cook until slightly caramelized.
3. Assemble Sandwiches:
Preheat the broiler (or a toaster oven).
Place each chicken breast on a roll. Spoon extra BBQ sauce over the top.
Add a slice of mozzarella cheese on each.
Place the sandwiches open-faced under the broiler for 1–2 minutes, or until the cheese is bubbly and slightly golden.
4. Finish & Serve:
Garnish with dried parsley if desired.
Close the sandwiches and serve warm with chips, fries, or a fresh salad.
