Preheat your oven to 375°F (190°C).
In a medium bowl, toss the halved strawberries with balsamic vinegar, sugar, and a pinch of salt. Spread them out on a baking sheet lined with parchment paper.
Roast the strawberries in the preheated oven for about 20 minutes, or until they are soft and juicy.
While the strawberries are roasting, prepare the whipped feta. In a food processor, combine the feta cheese, cream cheese, olive oil, and honey. Blend until smooth and creamy.
Season the whipped feta with salt and pepper to taste, then transfer it to a serving dish.
Once the strawberries are done, let them cool slightly before spooning them over the whipped feta.
Garnish with fresh basil leaves before serving.
Variations & Tips
For a milder flavor, you can substitute goat cheese for the feta. If you have picky eaters, consider serving the whipped feta and roasted strawberries separately, allowing everyone to assemble their own bites. You can also add a sprinkle of toasted nuts, such as walnuts or almonds, for some added crunch. For a spicier kick, try adding a pinch of red pepper flakes to the whipped feta.
