Ingredients
Dry Ingredients:

⢠1 teaspoon baking soda
⢠½ teaspoon salt
⢠1 teaspoon cinnamon
Wet Ingredients:
⢠½ cup unsalted butter, melted (or coconut oil for extra tropical flavor)
⢠¾ cup granulated sugar
⢠2 large eggs
⢠1 teaspoon vanilla extract
⢠3 ripe bananas, mashed
⢠½ cup crushed pineapple, drained
⢠½ cup shredded sweetened coconut
⢠¼ cup chopped macadamia nuts (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9Ć5-inch loaf pan.
2. Mix dry ingredients: In a bowl, whisk together flour, baking soda, salt, and cinnamon.
3. Mix wet ingredients: In a separate large bowl, beat together melted butter, sugar, eggs, and vanilla. Stir in mashed bananas and drained pineapple.
4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in shredded coconut and macadamia nuts (if using).
