Recipe 1: Nut and Seed Biscuits

- 70 grams (2.5 oz) almonds
- 50 grams (1.8 oz) dried apricots
- 30 grams (1 oz) oats
- 40 grams (1.4 oz) pumpkin seeds
- 20 grams (0.7 oz) sunflower seeds
- 20 grams (0.7 oz) sesame seeds
- 30 grams (2 oz) flaxseeds
- 20 grams (0.7 oz) cashews
- 20 grams (0.7 oz) pistachios
- 20 grams (0.7 oz) walnuts
- 20 ml (0.7 fl oz) honey
- 1 egg white
- A pinch of salt
Instructions:
- Prepare Apricots: Soak the dried apricots in cold water for 15-20 minutes. Drain and coarsely chop.
- Mix Nuts and Seeds: Combine almonds, oats, pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, cashews, pistachios, and walnuts in a bowl.
- Combine Ingredients: Add the chopped apricots, honey, egg white, and a pinch of salt to the nut and seed mixture. Mix well.
- Shape Biscuits: Place spoonfuls of the mixture onto a parchment-lined baking sheet and shape into biscuits.
- Bake: Bake in a preheated oven at 180°C (360°F) for 15-20 minutes, or until golden brown.
- Serve: Enjoy these biscuits as a nutritious snack or with your favorite beverage.
