Recipe 1: Nut and Seed Biscuits

  • 70 grams (2.5 oz) almonds
  • 50 grams (1.8 oz) dried apricots
  • 30 grams (1 oz) oats
  • 40 grams (1.4 oz) pumpkin seeds
  • 20 grams (0.7 oz) sunflower seeds
  • 20 grams (0.7 oz) sesame seeds
  • 30 grams (2 oz) flaxseeds
  • 20 grams (0.7 oz) cashews
  • 20 grams (0.7 oz) pistachios
  • 20 grams (0.7 oz) walnuts
  • 20 ml (0.7 fl oz) honey
  • 1 egg white
  • A pinch of salt

Instructions:

  1. Prepare Apricots: Soak the dried apricots in cold water for 15-20 minutes. Drain and coarsely chop.
  2. Mix Nuts and Seeds: Combine almonds, oats, pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, cashews, pistachios, and walnuts in a bowl.
  3. Combine Ingredients: Add the chopped apricots, honey, egg white, and a pinch of salt to the nut and seed mixture. Mix well.
  4. Shape Biscuits: Place spoonfuls of the mixture onto a parchment-lined baking sheet and shape into biscuits.
  5. Bake: Bake in a preheated oven at 180Β°C (360Β°F) for 15-20 minutes, or until golden brown.
  6. Serve: Enjoy these biscuits as a nutritious snack or with your favorite beverage.
