Instructions:

  1. In a medium saucepan, combine blueberries, water, and lemon juice.
  2. Simmer over medium heat for 5–8 minutes, stirring occasionally, until berries burst and release juices. Lightly mash with a fork for texture.
  3. Remove from heat and stir in chia seeds (plus cinnamon or vanilla, if using). Mix well.
  4. Let sit for 15–20 minutes, stirring occasionally, until thickened. It will set further as it cools.
  5. Optional:Β For extra sweetness, add a dash of stevia or monk fruit (adjust to taste).
  6. Transfer to a clean jar, seal tightly, and refrigerate.
