Instructions:
- In a medium saucepan, combine blueberries, water, and lemon juice.
- Simmer over medium heat for 5β8 minutes, stirring occasionally, until berries burst and release juices. Lightly mash with a fork for texture.
- Remove from heat and stir in chia seeds (plus cinnamon or vanilla, if using). Mix well.
- Let sit for 15β20 minutes, stirring occasionally, until thickened. It will set further as it cools.
- Optional:Β For extra sweetness, add a dash of stevia or monk fruit (adjust to taste).
- Transfer to a clean jar, seal tightly, and refrigerate.
Storage:Β Keeps for up to 2 weeks in the fridge.
