Directions

  1. Preheat oven to 350°F (175°C). Line a small 8×8 baking pan with parchment paper.

  2. In a bowl, whisk together:

    • peanut butter

    • honey (or maple syrup)

    • egg

    • vanilla extract

  3. Add in the oat flourbaking soda, and cinnamon. Stir until just combined.

  4. Fold in the chocolate chips if using.

  5. Pour batter into the prepared pan. Smooth the top with a spatula.

  6. Bake for 20–23 minutes, or until the edges are golden and the center is set.

  7. Cool completely, then cut into squares and enjoy!
