The sugar will start to clump before melting into a deep amber liquid. Be patient—this takes about 5-7 minutes.
Step 2: Add the Butter
Carefully add butter pieces, whisking continuously as the caramel bubbles and sizzles.
Stir until the butter is fully melted and incorporated.
Step 3: Pour in the Cream
Slowly pour in the heavy cream while whisking vigorously. The mixture will bubble up—keep stirring!
Allow it to simmer for 1 minute to create a rich and smooth consistency.
Step 4: Season & Cool
Stir in the sea salt (if making salted caramel).
Remove from heat and let it cool for 10-15 minutes before transferring to a jar.
Storage & Tips
Store in an airtight jar in the refrigerator for up to 2 weeks.
Reheat in the microwave or on the stovetop before using.
For extra depth, add ½ teaspoon vanilla extract after removing from heat.
