Instructions:

1. Marinate the Mutton

1. In a bowl, combine mutton, yogurt, ginger-garlic paste, turmeric, and salt.

2. Mix well and let it marinate for at least 30 minutes (preferably 1 hour for better flavor).



2. Prepare the Curry Base

1. Heat oil or ghee in a heavy-bottomed pot or pressure cooker.

2. Add cumin seeds, cloves, cardamom, bay leaf, and cinnamon stick. Sauté for a few seconds until fragrant.

3. Add sliced onions and cook until golden brown.



3. Cook the Masala

1. Add the ginger-garlic paste and sauté for a minute.

2. Stir in chopped tomatoes, green chilies, turmeric, red chili powder, coriander powder, and cumin powder.

3. Cook until the oil separates from the masala.



4. Cook the Mutton

1. Add the marinated mutton to the masala. Sauté on medium-high heat for 8-10 minutes until the mutton is well coated and starts releasing its juices.

2. Add 1 cup of water, stir well, and bring to a boil.



5. Pressure Cook or Simmer

Pressure Cooker: Close the lid and cook for 3-4 whistles until the mutton is tender.

Pot Method: Cover and simmer on low heat, stirring occasionally, until the mutton is fully cooked (takes 45-60 minutes). Add water as needed.



6. Final Touch

1. Add garam masala powder and simmer for 5 minutes to enhance the flavor.

2. Garnish with fresh coriander leaves.



Serving Suggestions:

Serve hot with steamed rice, jeera rice, roti, naan, or paratha. Pair it with a side of onion salad and lemon wedges for a complete meal.
