Prepare the Dough
In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for about 5 minutes until frothy.
Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover it, and let it rest for 1 hour or until doubled in size.
Prepare the Filling
In a small bowl, mix the grated cheese, chopped herbs, garlic powder, salt, and pepper.
Adjust seasoning to taste.
Divide and Shape the Dough
After the dough has risen, punch it down to release any air.
Divide it into 8 equal portions.
Flatten each portion into a small circle.
Place a spoonful of filling in the center, and fold the dough over the filling, pinching the edges to seal.
Roll the Filled Dough
Gently roll each stuffed dough ball into a flat circle, being careful not to let the filling spill out.
Cook the Flatbreads
Heat a non-stick skillet or griddle over medium heat.
Place each flatbread in the skillet and cook for 2–3 minutes on each side or until golden brown and puffed.
Repeat with the remaining flatbreads, adding a small amount of oil to the skillet if needed.
Serve
Serve warm and enjoy these stuffed flatbreads with your favorite dips or sides.
