Instructions
Mix marinade ingredients and combine with chicken in bag. Marinate 1-4 hours
Grill chicken on oiled grates at 400-425°F for 5-6 minutes per side until 165°F internal temperature
Combine corn, avocado, jalapeño, cilantro, lime juice, and seasonings. Mix well
Let chicken rest 5-10 minutes before slicing
Layer rice, chicken, and salsa in bowls. Top with cheese and garnish with cilantro and lime
Notes
- Can use fresh or frozen corn
- Adjust spice level by varying amount of chipotle and jalapeño
