Directions:
Marinate the Chicken: In a bowl, whisk together honey, lime juice and zest, olive oil, garlic, cumin, paprika, salt, and pepper. Add chicken and toss to coat. Let marinate for at least 30 minutes (up to 4 hours).
Cook the Rice: Rinse rice and place in a saucepan with water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until tender. Stir in lime juice, chopped cilantro, and salt. Set aside.
Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Remove chicken from marinade and cook for 5–6 minutes per side or until golden and cooked through. Let rest for 5 minutes, then slice or dice.
Prepare Avocado Mixture: In a bowl, toss diced avocado with lime juice and a pinch of salt.
Assemble the Stacks: On each plate, layer a scoop of rice, a spoonful of avocado, and sliced honey lime chicken on top. Garnish with desired toppings.
