Keep the stems: a detail that makes all the difference
A small step not to be overlooked: don’t remove the stems (or calyxes) too early. They act as a natural cover that protects the strawberry flesh from air and dehydration. Remove them just before eating.
And what about leftovers? Freezing is your ally.
If you’ve bought too many strawberries or they’re starting to soften, consider freezing them. Wash them, hull them, dry them, then arrange them on a baking sheet for quick freezing. Once frozen, transfer them to an airtight freezer bag. Ideal for making smoothies, coulis, or even a quick tart.
Mistakes to absolutely avoid
Washing them too early: as mentioned above, this is the best way to spoil them. Leave them at room temperature: in a few hours, they become soft, even fermented.
Stack them: the pressure crushes them and makes them ooze. Always keep them in a single layer.
