A small gesture not to be overlooked: don’t remove the stems (or calyxes) too early. They act as a small natural lid that protects the strawberry flesh from air and dehydration. You should remove them just before eating.
And for surplus? Freezing is your ally
If you’ve bought too many strawberries or they’re starting to soften , consider freezing them. Wash them, hull them, dry them, then arrange them on a baking sheet for quick freezing. Once frozen , transfer them to an airtight freezer bag . Ideal for making smoothies, coulis, or even a quick pie.
Mistakes to absolutely avoid
Washing them too early : as seen above, this is the best way to spoil them.
Leave them at room temperature : in a few hours, they become soft, even fermented.
Stack them : the pressure crushes them and makes them ooze. Only one layer, always.
How to recognize a strawberry that is going bad
Mold (white or gray spots)
Sour smell
Pasty or sticky texture
