- Prepare the Potatoes:
- Scrape, rinse, and pat dry the potatoes. Slice them into half-inch pieces.
- Peel and halve the large egg.
- Mix the Coating:
- In a bowl, mix the all-purpose flour, corn flour, semolina, paprika, garlic powder, salt, and smoked paprika until well combined.
- Prepare the Egg Mixture:
- In another bowl, whisk together the egg white and milk.
- Coat the Potatoes:
- Dip the potato slices into the egg and milk mixture.
- Coat them thoroughly with the flour mixture, making sure each piece is well covered.
- Shake off any excess coating and set the potatoes aside for a few minutes.
- Frying the Potatoes:
- Heat the oil in a deep fryer or large pan to about 160 degrees Celsius. You can check the temperature by dipping a wooden chopstick into the oil; if bubbles form around the chopstick, the oil is ready.
- Fry the potato chunks in batches, ensuring not to overcrowd the pan. Fry until golden brown on both sides. If they brown too quickly, reduce the heat slightly.
- Transfer the fried potatoes to a cooling rack to drain excess oil. Repeat with the remaining potatoes. Each batch should take about two minutes.
- Double Fry for Extra Crispiness:
- After the initial frying, increase the oil temperature slightly and fry the potatoes for an additional 30 seconds.
- Transfer the potatoes back to the cooling rack to drain and cool.
- Serve:
- Serve the crispy mojo potatoes with your preferred dip and enjoy!
