HOW TO MAKE POTATO BREAD

This potato bread yields an incredibly soft, moist crumb with a subtle sweetness and a beautiful golden crust. It’s perfect for sandwiches, toast, or simply slathered with butter.

Ingredients
1 cup mashed potatoes, cooled (Yukon Gold or Russet are ideal)

1 cup warm water (around 110°F/43°C)

2 ¼ tsp (1 packet) active dry or instant yeast

2 tbsp granulated sugar

2 tbsp olive oil or melted butter, plus more for greasing

1 ½ tsp salt

3 – 3 ½ cups all-purpose flour, divided, plus more for dusting
