Ingredients to make the softest cake in the world in 5 minutes
3 medium eggs
A pinch of salt
8g vanilla sugar or 1 tbsp vanilla essence
150g sugar
Grated lemon
120ml sunflower oil
150ml milk
250g flour 00
16g sweet yeast
Apricot jam
grated coconut
Procedure
In a bowl, mix the eggs with a pinch of salt, the vanilla sugar, and the sugar until creamy. Add the lemon zest, sunflower oil, and milk, making sure to fully incorporate all the ingredients.
Gradually add the flour and baking powder, mixing until you get a soft, even dough. Pour the dough into a 27×28 cm (10.6×11.1 inch) pan.
Microwave on high for 5 minutes (keeping in mind that microwave power may vary, adjust cooking time if necessary).
To check for doneness, insert a toothpick into the center of the cake; if it comes out clean, it’s ready. Let the cake cool. Spread a layer of apricot jam over the surface and sprinkle with shredded coconut.
