Use a cardboard box with layers of towels, old clothes, or paper to absorb moisture.
Sprinkle baking soda on the bottom.
Place the ginger unstacked, alternating layers of paper and baking soda.
Close the box and store in a cool, dry and ventilated place, away from the sun.

Advice: This method prevents breakout and decomposition thanks to the baking soda.

Additional recommendation: Check the contents of the box every couple of months and replace the baking soda if you notice moisture buildup or odor changes.
