Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a large bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well blended.
Add the dry ingredients to the wet ingredients and mix just until combined.
Fold in the crushed pineapple, mashed bananas, and chopped pecans.
Pour the batter into the prepared loaf pan. Top with additional chopped pineapple and pecans.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
