Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
In a large bowl, combine almond flour, Parmesan cheese, cheddar cheese, baking powder, salt, garlic powder, onion powder, basil, and parsley. Whisk together.
In another bowl, beat the eggs and then stir in the melted butter and Greek yogurt until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for a few minutes before transferring it to a wire rack. Allow it to cool slightly before slicing and serving.
Variations & Tips
If you’ve got picky eaters at home, feel free to swap out the cheeses to suit their tastes—Monterey Jack or Gouda work great. You can also experiment with different herbs like thyme or oregano. If you’re looking to add a bit of crunch, a sprinkle of sunflower seeds or chopped nuts on top before baking can provide a delightful texture.
