- Mix & Coat: In a sizable mixing bowl, blend the diced red potatoes, finely chopped onion, mayo, garlic powder, dill, salt, and pepper. Ensure the potatoes and onions are generously and evenly slathered with the mayo mixture.
- Baking Session: Evenly spread the potato mixture on your baking sheet. Bake in your pre-warmed oven for 25-30 minutes. The golden rule? If a fork pierces a potato easily, they’re ready.
- Parmesan Magic: After removing the potatoes from the oven, shower them with the grated Parmesan cheese. Put them back in the oven for another 3-5 minutes, just until the cheese melts into a slight golden hug.
- Cool & Serve: Once baked to perfection, let them sit for a few moments to cool. Serve these golden delights as a star side dish or even as a mouth-watering snack. They pair well with a dip of your choice or shine brilliantly on their own.
