Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the sliced chicken fillets and season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes per side.
Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced red and yellow bell peppers. Sauté for about 5 minutes until they are slightly softened.
In a rectangular glass baking dish, layer the cooked chicken fillets and sautéed bell peppers.
Sprinkle the shredded cheddar and mozzarella cheese evenly over the top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley if desired.
Variations & Tips
For a spicier kick, consider adding sliced jalapeños or a sprinkle of red pepper flakes to the dish. You can also experiment with different types of cheese, such as pepper jack or gouda, for a unique flavor profile. If you prefer a creamier texture, add a layer of cream cheese or sour cream between the chicken and peppers before topping with shredded cheese. For a vegetarian version, substitute the chicken with sliced mushrooms or zucchini.
