1. Preheat your oven to 350 degrees F.
2. Spread the pecan halves out in a single layer on a baking sheet and toast them for 6-8 minutes, or until they’re fragrant and lightly browned. Set aside.
3. Unwrap the caramels and place them in a microwave-safe bowl along with the milk. Microwave for 1 minute at a time until the caramels are fully melted and smooth. Stir in the vanilla extract.
4. Line a baking sheet with parchment paper and arrange the toasted pecans in clusters of 2-3, leaving some space between each cluster for the caramel and chocolate.
5. Spoon a small amount of caramel onto each cluster of pecans, making sure to cover the pecans but not overflowing onto the parchment paper.
6. Melt the milk chocolate and dark chocolate separately using a double boiler or in the microwave. Spoon a small amount of each melted chocolate over the caramel and pecans, creating a swirled effect.
7. Allow the turtle candy to cool and harden at room temperature for at least an hour, or until the chocolate is set. Feel free to decorate with more pecans. You can also chill the candy in the fridge for faster cooling.
8. Once the turtle candy is fully set, carefully peel them off of the parchment paper and serve. Store the candy in an airtight container at room temperature for up to 1 week.
