I fell in love with these while studying abroad in college. Hadn’t had any in years and then I found this recipe.

Prepare Bologna:
Slice an ‘X’ through the center of each piece of bologna.
Fry Bologna:
Place the bologna slices in the skillet and fry for 3-4 minutes per side until caramelized and charred.
Assemble Sandwich:
Remove the cooked bologna from the skillet and place three slices on each prepared sandwich.
Top and Serve:
Place the remaining slices of bread on top of the bologna to complete the sandwich. Serve immediately.
