I just grate a potato and a zucchini. It turns out so delicious that I make it every week in the summer. (Page 2 ) | November 10, 2025
Prepare the vegetables:
Wash and peel the zucchini and potatoes. Grate them finely. If the zucchini is very watery, gently drain the excess liquid.
Prepare the mixture:
Finely chop or grate the onion. In a large bowl, mix the grated zucchini, potatoes and onion. Add the eggs, sour cream, salt, pepper, flour and baking powder. Mix well until smooth.
Fry the pancakes:
Heat a frying pan with a little oil over medium heat. Using a spoon, form small round pancakes and fry them until golden on both sides – approximately 3–4 minutes per side.
Serving:
Once they are done, place them on kitchen paper or napkins to drain excess fat. They are best served hot – with sour cream, yogurt or your favorite sauce.
