Use a large pot of well-salted water (like the sea!) and cook pasta until just shy of al dente.
Save pasta water:
Before draining, reserve ½–1 cup of the starchy cooking water. This is the secret to perfectly coated noodles.
Combine pasta and sauce:
In a pan, heat your pasta sauce and add the drained pasta. Gradually stir in some of the reserved pasta water. This helps the sauce cling to every strand, creating a silky, cohesive dish.
Finish and serve:
Toss everything together for 1–2 minutes over low heat. Add olive oil, fresh herbs, or grated cheese as desired. Serve immediately.
