Marinate the Beef: In a bowl, combine the 1 pound of thinly sliced beef, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Toss to coat the beef evenly and let it marinate for about 15 minutes.
Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry until it’s browned. Remove the beef from the skillet and set it aside.
Stir-Fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the 1 sliced large onion, 1 sliced green bell pepper, and 1 sliced red bell pepper. Stir-fry until the vegetables are tender-crisp. Add the 2 cloves of minced garlic to the skillet and stir-fry for another minute until fragrant.
Combine & Thicken: Return the beef to the skillet. Add the 1 tablespoon of oyster sauce, 1 teaspoon of sugar, ½ teaspoon of black pepper, and ¼ cup of beef broth. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens slightly and coats the ingredients.
Serve: Serve the pepper steak hot, with your favorite sides like steamed rice.
