Directions
1. In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
2. Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
3. Stir in the chopped cabbage, cooking until it begins to soften, about 5 minutes.
4. Pour in the chicken broth and add the bay leaf. Season with salt and pepper to taste.
5. Bring the mixture to a simmer, cover, and cook for 20 minutes.
6. Add the frozen pierogi to the pot, stirring gently to combine.
7. Cover and simmer for an additional 10-12 minutes, or until the pierogi are heated through.
8. Remove the bay leaf, stir in the fresh dill, and serve hot.

For a spicier version, add a pinch of red pepper flakes or a diced jalapeño with the onion and garlic. You can also substitute kielbasa or bratwurst for the smoked sausage, depending on your preference.
