1 package (about 12) frozen pierogi
1 tablespoon fresh dill, chopped
Directions
1. In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
2. Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
3. Stir in the chopped cabbage, cooking until it begins to soften, about 5 minutes.
4. Pour in the chicken broth and add the bay leaf. Season with salt and pepper to taste.
5. Bring the mixture to a simmer, cover, and cook for 20 minutes.
6. Add the frozen pierogi to the pot, stirring gently to combine.
7. Cover and simmer for an additional 10-12 minutes, or until the pierogi are heated through.
8. Remove the bay leaf, stir in the fresh dill, and serve hot.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes or a diced jalapeño with the onion and garlic. You can also substitute kielbasa or bratwurst for the smoked sausage, depending on your preference. If you’re looking to add more vegetables, consider adding sliced carrots or diced potatoes along with the cabbage. For a vegetarian option, use vegetable broth and omit the sausage, adding more pierogi or beans for protein.
