Preparation:
1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat together the butter and granulated sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
5. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir until the ingredients are combined.
6. Divide the batter evenly between the three prepared cake pans.
7. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
8. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
9. In a large bowl, whisk together the whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
10. Place one cake layer on a serving plate. Spread a layer of cream frosting on top.
11. Layer sliced strawberries, blueberries, raspberries, kiwis, and pineapples over the frosting.
12. Place the second cake layer on top and repeat the process with the frosting and fruit.
13. Place the third cake layer on top and brush the top and sides of the entire cake with the remaining frosting.
14. Place additional fresh fruit on top of the cake and garnish with fresh mint leaves, if desired.
15. Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to blend.
