1. Soft-Boil the Eggs
Bring water to a boil in a small pot.
Add eggs and cook 6–7 minutes for soft yolks.
Transfer eggs to ice water, peel, and set aside.
2. Prepare the Broth
In a pot, heat sesame oil over medium heat.
Sauté garlic and ginger until fragrant, 1–2 minutes.
Add broth, soy sauce, and chili flakes; simmer 5 minutes.
3. Cook the Ramen and Shrimp
Cook ramen noodles according to package instructions; drain.
Add shrimp and mushrooms to the simmering broth; cook 3–4 minutes until shrimp are pink and opaque.
Add spinach or bok choy just before serving.
4. Assemble the Ramen Bowls
Divide cooked noodles between bowls.
Pour hot broth, shrimp, and vegetables over noodles.
Halve the soft-boiled eggs and place on top.
Garnish with green onions and sesame seeds.
5. Serve
Serve immediately, with extra soy sauce or chili paste if desired.
