Prepare the Mixture:
In a large mixing bowl, add the ground chicken, mozzarella cheese, eggs, sour cream (or Greek yogurt), and chopped parsley.
Season with salt and pepper to taste.
For those who prefer a firmer texture, add breadcrumbs to the mixture to give it a bit more body and make it easier to shape.
Form the Patties:
Using your hands, take a portion of the chicken mixture and shape it into small, round patties, about 2-3 inches in diameter.
Press each patty gently to ensure it holds its shape. You should be able to make about 6-8 patties, depending on the size.
Cook the Patties:
Pan-Fry Method: Heat a small amount of olive oil in a skillet over medium heat. Carefully place the patties in the pan, leaving enough space between each one. Fry for about 4-5 minutes on each side, or until the patties are golden brown and cooked through. They should reach an internal temperature of 165°F (74°C) for safe consumption.
